أثناء انعقاد أول مؤتمر عالمي حول نبات الصبار في بلاد المكسيك سنة 1989 ، توصل المشاركون في هذا الملتقى العلمي إلى الاعتقاد بأن هذا النبات يمكن أن يصلح كاختيار عالمي للحد من آفات المجاعة وسوء التغذية ،و يمكن أن يكون أيضا بديلا للعديد من المواد الغذائية التقليدية.و من هذا المنطلق أصبح ينظر إليه كغذاء للمستقبل للعديد من سكان العالم باعتباره مصدرا طعام مغذ ورخيص لذوي الدخل المحدود وأيضا للمستهلكين الأغنياء على السواء ،وخاصة في المناطق الجافة و الشبه الجافة التي يعتبر فيها نبات الصبار من المحاصيل الهامة ، و يرجع ذلك لقدرته على مقاومة الجفاف ،مع إنتاجية عالية ، بينما لا تتطلب زراعته جهدا كبيرا.هذا فضلا عن الدور الإيكولوجي لهذا النبات كوسيلة ناجعة لإغناء التربة، و بالتالي حماية القشرة الأرضية من عوامل الــــــــــتعرية و الإنجراف، إذ يمثل أنسب الوسائل للحفاظ على البيئة ومقاومة التصــــــحر.
و كل هذه العوامل السالفة الذكر كانت من بين الأسباب التي جعلت الاهتمام حول نبات الصبار يتزايد بشكل ملفت للنظر خلال السنوات الأخيرة؛ و ذلك من خلال مجموعة من الدراسات و الأبحاث العلمية التي أجريت حوله، مما أدى إلى تطور تقنيات زراعته التي أصبحت تعتمد على السقي عن طريق التنقيط داخل البيوت البلاستكية ، و كذلك إنشاء مشاتل لنبات الصبار المثمر عن طريق الإكثار المعملي ،وأيضا إنتاج سلالة من التين الشوكي خالية من البذور؛ مما أدى إلى توسع المساحات المزروعة لهذا النبات ، و انتشار منتجاته المتنوعة في السوق العالمية . و المغرب أصبح بدوره هو الآخر من بين البلدان التي بدأت تولي اهتماما كبيرا لنبات الصبار؛ و من هذا المنطلق إذن جاء ت فكرة هذا الكتاب كمساهمة متواضعة في حملة التحسيس و إثارة الإنتباه حول هذا النبات الذي ما زال يقترن عند الكثير من الناس بالفقر و الجهل ،و من جهة أخرى أيضا لسد الخصاص الذي لا زالت تعاني منه المكتبة العربية ليومنا هذا من ندرة الكتب والمراجع حول هذا النبات . و في هذا الكتاب سنلقي الضوء على نبات الصبار باستعراض فوائده الطبية و خصائصه الغذائية التي توصل إليها العلم الحديث من خلال الأبحاث و الدراسات المستفيضة، والتي أثبتت ما لهذا النبات من قيمة علاجية كبرى لمجموعة من أمراض العصر مثل : داء السكري، الكوليستيرول ، السمنة ، تصلب الشرايين ، اضطرابات الجهاز الهضمي وقرحة المعدة ، اضطرا بات المسالك البولية ، سرطان البروستاتا ، سرطان القولون، و القلق و التوتر ... أو ما أصبح يصطلح عليه : التداوي بالصبار أي الكاكتوتيرابي ، وهنا نسجل بكل فخر و اعتزاز بأن مصطلح( الكاكتوتيرابي) يدخل قاموس اللغة لأول مرة من خلال تداوله في هذا الكتاب، و يرجع الفضل في اكتشافه للخبير عبد الرحمن أيت حمو رئيس الجمعية الوطنية لتنمية الصبار، و الذي يعتبر بحق كمرجع لنبات الصبار بالمغرب ، وبالمناسبة نشكر له المساعدة القيمة و الكبيرة التي قدمها لنا أثناء إعدادنا لهذا الكتاب . كما سنعدد أيضا بعض منافذ تصنيع نبات الصبار في ميادين متعددة مثل الصناعات الغذائية و الصيدلانية، و مستحضرات التجميل، و إنتاج الطاقة، و البناء، و التغذية الحيوانية، و الصباغة القرمزية.... و سيحظى الجزء الأكبر من هذا الكتاب للاستعمال المطبخي لنبات الصبار ، و ذلك من خلال إعداد وصفات قام بتحضيرها فريق من أمهر الطباخين المحترفين تحت إشراف طباخ عالمي من العيار الثقيل، والذي يعتبرمن بين رواد الطبخ المغربي و العالمي، إنه السيد بوشعيب كاما ،رئيس سابق لقسم الطباخين لمجموعة من السلاسل الفندقية العالمية ...و قد حاول بفضل حنكته و تجربته الطويلة و التي تزيد عن أربعين سنة ، إعداد وصفات هذا الكتاب حتى تتناسب مع الذوق العربي ، انطلاقا من قاعدة مطبخية مغربية ، مع تفتح عالمي على وصفات مشهورة من دول أمريكا اللاتينية ، و منطقة حوض البحر المتوسط . كما تجدر الإشارة هنا أننا استعملنا دقيق الصباركمنتوج و كاكتشاف جديد له مستقبل واعد في ميدان التغذية الصحية وكذا أنظمة الحمية و التخسيس؛ وذلك انطلاقا من مبدأ كون أن التغذية الصحية أصبحت تشكل اليوم جزءا من البرنامج العلاجي لكثير من الأمراض .
